Kimoto Glassware x Takenotsuyu Shuzojo: Japanese Sake Glass Seminar

If there are wine glasses, why aren't there sake glasses? It is with this question in mind that Kimoto Glassware's "es" was created.
At NOHGA HOTEL UENO, we will be holding Part 4 of our most popular seminar, pairing different glass designs with various sakes.

Our guest lecturer this time around will be Masao Aizawa of "Takenotsuyu Shuzojo" - the historic sake brewery founded in 1858 in Inomata Shinden of Yamagata Prefecture.

Takenotsuyu Shuzojo is tucked away in the bamboo thickets of Yamagata, carrying on the tradition of brewing fine, high-quality sake using only locally-grown rice.
Their constant focus on leveraging modern technology to make the most out of the local ingredients does not go unnoticed. Their sakes - known for delicate flavors, deep umami aftertaste, and dry, full-bodied profiles - have earned numerous awards and respected notoriety domestically and abroad.

In 1994 the small, modest brewery began selling its sake nationwide. Since then, it's fans have stretched overseas, especially in the United States. Takenotsuyu Shuzojo has begun collaboration with American producers to create a series of junmai (sake made without added alcohol or sugar) titled "First of Jizake".

Back again as our main lecturer will be president of Kimoto Glassware, Seiichi Kimoto.
Mr. Kimoto has garnered well-earned respect and acclaim in the sake and glassware worlds for his vast glassware knowledge, unmistakable charm, and dedication to creating new and original ways to enjoy sake.

Mr. Masao Aizawa / Takenotsuyu Shuzojo
Mr. Aizawa is senior partner and head of production at Takenotsuyu Shuzojo - the historic sake brewery founded in 1858 in Inomata Shinden of Yamagata Prefecture. In addition to only using locally-grown rice like "dewasansan", he oversees the use of un-boiled, pure water in the distilling process. His distillery is the only one in Japan certified to sell sake using this pure, unaltered, natural water. Unfazed by generational fads and trends of the sake world, Mr. Aizawa is only concerned with producing sake with a flavor and character that suits harmoniously to meals of all kinds. A student of sake at heart, he takes a serious and honest approach to creating an array of sakes that can be beloved by all, and perhaps win a few awards along the way.
