At NOHGA HOTEL UENO, we will be holding Part 5 of our most popular seminar, pairing different glass designs with various sakes.
Our guest lecturer this time around will be Katsuhiko Miyasaka of Miyasaka Brewing Co., the esteemed sake brewery founded in 1662 in Suwa, Nagano Prefecture.
Miyasaka Brewing, nestled beside Mount Kirigamine in Nagano Prefecture, is blessed with clear spring water and a cool climate. It is here that a passionate team of brewers continue their craft of producing "high quality hand-made" Japanese sake.
The brewery utilizes "Yeast Number Seven" - a very fine yeast discovered for the first time in the creation of their own refined sake. It has since become a favorite of brewers across Japan, and is still the most widely used sake yeast in the world today.
They have always truly embodied the idea of "Masumi" - or, purity - in their faithful pursuit of producing genuine, fine sake.
In recent years, they launched their new brand: "MIYASAKA". True to their roots of "Yeast Number Seven", this new brand (with a new bottle and label) shows their fearlessness even in the evolution of their craft.
"Masumi" and "Miyasaka" - in their own right - represent both tradition and innovation.
"Yeast Number Seven", known for its ability to bring out the best flavor of Japanese dishes and natural ingredients, is recognized as one of the best yeasts for making "meal-time sake". We are excited to have Miyasaka Brewing come share the story of their sake with all of us.
Back again as our main lecturer will be president of Kimoto Glassware, Seiichi Kimoto.
Mr. Kimoto has garnered well-earned respect and acclaim in the sake and glassware worlds for his vast glassware knowledge, unmistakable charm, and dedication to creating new and original ways to enjoy sake.
