We are pleased to announce the Summer 2025 edition of our popular event, "Japanese Sake Tripling Dinner," at Bistro NOHGA, where guests can enjoy an original course menu paired with Japanese sake and exquisite glass sake vessels.

We collaborated with the brewery Toshimaya Shuzou for this event, whose philosophy is "brewers craft sake and nurture connections between people." The brewery's foundation traces back to when the first-generation Toshimaya Juemon established a sake shop and standing bar at Kanda Kamakura Riverside in Edo (today's Uchi-Kanda area in Tokyo). Now located in Higashi-murayama City, they craft Tokyo's local sake with rich aroma and flavor using brewing water drawn from wells 150 meters deep.

Enjoy the triple experience of carefully selected Japanese sake from this distinguished brewery, delicate glassware born from Edo-kiriko craftsmanship techniques, and exquisite cuisine created by Bistro NOHGA's Chef Ebihara.

*The brewery's representative, Tadayuki Tanaka, will talk about the commitment to sake brewing, the characteristics of "Okunokami," and how to enjoy it deliciously.
Glassware (the sake will be paired with glassware)
*Seiichi Kimoto of Kimoto Glassware will select sake glasses to pair with the sake and speak about their features, key points, and how to savor sake with them.

Toshimaya Shuzou is a sake brewing company located in Higashi-murayama City, Tokyo, with a history spanning over 400 years.
In 1596, during the transition from the Azuchi-Momoyama period (1573-1603) to the Edo period (1603-1868), the first-generation Toshimaya Juemon established "Toshimaya," a combination sake shop and standing bar, at Kanda Kamakura Riverside in Edo (today's Uchi-Kanda area in Tokyo). The establishment later played a pivotal role in popularizing and selling shirozake (white sake), which has become indispensable to modern Hinamatsuri (Girls' Day) celebrations. As Tokyo's oldest sake merchant, the company has continued its rich history for over 400 years.
From the mid-Meiji period (1886-1899), the company began producing sake in the Nada region of Hyogo Prefecture. In the early Showa era (1926-1945), Toshimaya became the sake retailer "Toshimaya Corporation" (Kandasarugaku-cho), while the brewery relocated to Higashi-murayama City and became the independent brewing company "Toshimaya Shuzou."

Today, Toshimaya Shuzo brews and sells a range of products including shirozake, sake brands such as Kinkon, Okunokani, and Rita, mirin (sweet cooking rice wine), and kijoshu, a premium aged sake produced by only a select number of breweries in the whole country. Guided by their philosophy of "taking pride in brewing fine sake while fostering human connections, and aspiring to help create a society where everyone can live joyfully and happily," they continue to dedicate themselves to the craft of sake brewing with unwavering commitment.
