【Bistro NOHGA】Semi-buffet-style breakfast will start from April 1

We are pleased to announce the launch of a new semi-buffet-style breakfast at Bistro NOHGA from Saturday, April 1, 2023.

Bistro NOHGA will offer a new style of breakfast that allows you to enjoy a new interpretation of a buffet service. Select one main dish plate from three varieties of Japanese and Western dishes.

Buffet menu
The buffet table features a line-up of fresh salad, fruit, cereal, yogurt, bread and soup. Please help yourself to whatever you feel like, while your main dish is being prepared.

The soup is a very healthy vegan soup prepared using mainly vegetables, in a chickpea broth. Even non-vegan diners will take on a fresh appreciation for the deliciousness of vegetables!

Gluten-free dishes are also available upon request, and Bistro NOHGA is also able to provide non-allergen bread. 28 allergens have been excluded from the manufacturing process, allowing the bread to be enjoyed even by allergy sufferers.

As drinks to accompany your meal, you are free to choose from orange juice or apple juice, and we also recommend the coffee, which is blended and roasted by Kabuki, a popular coffee & chocolate shop in local. Along with the taste, take in the coffee's aroma as it ushers in a gorgeous morning!

Main menu
Brioche French Toast & Ohta's Bacon
A match made in heaven - French toast prepared by soaking a butter-rich brioche in egg batter for a day and then grilling it, and juicy grilled bacon which is smoked at Ohta's for an hour and a half at 60ºC.

Buckwheat Flour Galette with Ohta's Ham and Seasonal Ingredients
Featuring a buckwheat flour galette - a dish local to France's Loire Valley - built around an ample serving of Swiss-made Gruyere cheese, a softly-cooked egg and Ohta's ham, this is a substantial breakfast.

Eggs Benedict with Ohta's Sausage and Seasonal Ingredients
Eggs benedict tends to bring to mind a heavy meal, since it normally uses a rich sauce known as Hollandaise sauce. At Bistro NOHGA, however, the sauce portion is prepared as a fluffy espuma, or foam, allowing you to enjoy eggs benedict as a light dish. Please enjoy eating it in conjunction with the filling.

A Japanese-style set menu that incorporates regional ingredients
The Japanese-style set menu is composed around soup, rice and three dishes. In addition to grilled fish from Hokkaido and a Japanese rolled omelette, it makes full use of locally-sourced ingredients such as rice from Inaricho Aizawa Kometen, miso and Japanese pickles from Gunji Miso Tsukemono, and bonito flakes from Iseoto. It is designed as a meal that offers well-balanced nourishment while being easy on the waking body.
