[EDO KAIJO × KIMOTOGLASS × Bistro NOHGA] Japanese Sake Tripling Dinner - Autumn 2024
This Autumn, NOHGA HOTEL is collaborating with Tokyo Port Brewery, the only sake brewery in the 23 wards of Tokyo, which has brought a historic brewery in Minato City back to life after 100 years. Tokyo Port Brewery specializes as a sake microbrewery, one of the few worldwide, and uses Tokyo's highly purified municipal water to make fresh, high-quality sake using brewing techniques adapted to its city environment.
For this event, Tokyo Port Brewery will offer its "Edo Kaijo" sake, inspired by the daily evolution of Tokyo, carefully paired with delectable cuisine and exquisite sake glasses to bring you a precious, meaningful "experience you can only have here, for a single day."

*The brewery director Shunichi Saito will introduce Tokyo Port Brewery's brewing philosophy, the unique characteristics of Edo Kaijo and suggested ways to enjoy the sake.
・Glassware (the sake will be paired with glassware)
*Seiichi Kimoto of Kimoto Glassware will select sake glasses to pair with the sake and speak about their features, key points, and how to savor sake with them.

Tokyo Port Brewery, operated by Wakamatsu Co., Ltd., is the only sake brewery in the 23 wards of Tokyo and is gaining popularity as a "sake brewery reborn in the great metropolis." The brewery was previously known as "Wakamatsu-ya," a brewery during the Edo period. At the end of the Edo period, Wakamatsu was recognized as a merchant doing business with the Satsuma clan, whose Daimyo had a residence in the neighborhood, and the brewery produced and delivered potato shochu and nigorizake (cloudy sake).
Today, the koji cultivation room, tanks, sake press and other equipment required for brewing sake have all been relocated to the Shiba building in Minato City and Tokyo Port Brewery produces a wide range of Japanese sake - from doburoku nigorizake and liqueur to Junmai Ginjo sake. Using Tokyo's highly purified municipal water, Tokyo Port Brewery also brews its popular Edo Kaijo sake using techniques adapted to its city environment.
