[ISHIKAWA Brewery × KIMOTO GLASS × Bistro NOHGA triple collaboration] Autumn 2025 Sake Tripling Dinner

We are pleased to announce the Autumn 2025 edition of the popular event "Japanese Sake Tripling Dinner," held at Bistro NOHGA, during which guests can enjoy sake paired with an exclusively prepared multi-course meal and glassware.
This time, our collaboration features Ishikawa Brewery, which has been brewing sake with heartfelt dedication since 1863 while preserving its traditional techniques. Located in Kumagawa, Fussa City, Tokyo, the brewery's signature choice sake Tamajiman ("the pride of Tama") was named with the hope that it will delight many people as the pride of Tama while expressing the area's spirit.
On the night of the event, you will enjoy a "tripling" experience featuring Ishikawa Brewery's sake which is brewed using natural underground water from Tokyo, delicate glassware created by Kimoto Glass Tokyo based on traditional Edo Kiriko techniques, and the exquisite cuisine created by Bistro NOHGA's chef, Takero Ebihara.

The history of Ishikawa Brewery started in 1863 on the first day of the ninth month under Japan's old calendar. Wakichi Ishikawa, the 13th-generation head of the Ishikawa family, started brewing sake by renting a storehouse of Morita Brewery in Ogawa Village (now Akiruno City), across the Tama River. Ishikawa's first brand name was Yaezakura ("double-flowered cherry") since it was considered to have a sister-sake relationship to Morita Brewery's Yaegiku ("double-flowered chrysanthemum").
Ishikawa Brewery's brand was later renamed Yae-ume ("double-flowered plum") in 1919, and the present brand name, Tamajiman, came to be used in 1933.
Following traditional practices, Ishikawa Brewery's sake is brewed only from autumn to early spring in a method known as kanzukuri ("cold-season brewing"). The brewing water is natural medium-hard underground water drawn from 150 meters beneath the ground in Tokyo. Brewing takes place inside an earthen-walled storehouse built in the Meiji era for sake making, which is now a nationally registered tangible cultural property that has been carefully maintained and restored over time. From the rice's arrival at the storehouse to the finished sake, each step of the brewing process is meticulously carried out by dedicated brewers working in this unique environment, resulting in the choice sake Tamajiman.
Time flows gently on the Ishikawa Brewery premises watched over by a large zelkova tree, allowing visitors to discover the charms of sake and beer brewed specially in each season.
