We proudly source select breads from our bakery neighbors along the Sumida River: Manufacture Asakusa. Delightfully salted and kissed with olive oil, their French sourdough is the perfect partner for eggs and bacon. Try it out in our open sandwich main plate.
This soup starts with a base both, made by stewing chicken and herbs on low heat for over 5 hours. From there, our chefs add five types of vegetables and white beans. But the real umami is drawn out by adding bacon from our neighbors at Ohta's Ham. The pork and beef masters at Ohta's Ham provide us with the most flavorful cuts to bring to you in our homemade soup.

Handmade tsukudani (soy sauce-simmered seaweed or seafoods) from "Funato Shoten", the 80-year-old shop right across the street from NOHGA HOTEL UENO TOKYO. Their recipes, unchanged for decades, pair divinely with fresh-cooked Japanese white rice.
Gunji Miso & Tsukemono has been fermenting miso naturally, according to the changing climates of the seasons, since its establishment in 1957. The rich umami extracted in this traditionally process is exactly why we choose to use their miso in our miso soup, and our salad dressing.
